I don’t know about you, but some nights I just do not feel like cooking a big meal for my family. Or I’m just too busy! With the home renovation, we are going through right now, I need all the quick and easy recipes I can find. Otherwise, we’ll be having McDonald’s every night of the week. That might be okay with my daughter, but I get kind of sick of it after a while. And nothing beats a home-cooked meal.

This recipe for BBQ Chicken Pizza is a quick and easy recipe just for those busy weeknights. I can prepare ahead of time so all I have to do is throw the pizza together and cook it. Even if I forget to prep ahead, this recipe only takes a few minutes to make.

BBQ Chicken Pizza Recipe

What you need:

Dice the peppers and onions for the BBQ Chicken Pizza
  • Tube of refrigerated pizza dough
  • BBQ sauce
  • Chicken breast, cooked and diced
  • Diced bell peppers
  • Diced red onions
  • Shredded cheese of your choice (I used a mixture of mozzarella and cheddar)

What you do:

  1. Roll out the refrigerated pizza dough using a rolling pin or your hands. Bake in a preheated 425*F oven for about 7 minutes.
  2. While the dough is baking, put about a cup of BBQ sauce in a small bowl and add the cubes of chicken; mix well.
  3. When the dough is done, add a few tablespoons of BBQ sauce to the dough and spread around. Add the chicken, peppers, onions, and cheese.
  4. Return pizza to oven and cook 10-12 minutes longer, until cheese is melted and dough is golden brown.
Dice the Chicken

That’s all there is to it! You could also prepare ahead of time by dicing your peppers and onions and storing them in a plastic bag in the refrigerator. Also, you can cook your chicken in the slow cooker as I did for my Slow Cooker BBQ Chicken Wraps recipe. Then you can shred your chicken instead of having it cubed.

Pair this BBQ Chicken Pizza with a side salad and you’ve got yourself a quick and easy weeknight meal!

BBQ Chicken Pizza

Ingredients
  

  • 1 tube refrigerated pizza dough
  • 1 cup BBQ sauce, plus 3 or 4 tablespoons
  • 1/2 cup diced green bell peppers
  • 1/2 cup diced red onion
  • 2 cups chicken breast, cooked and cubed

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit.
  • Roll out the pizza dough with a rolling pin or your hands; bake in preheated oven for 7 minutes.
  • Meanwhile, mix chicken with 1 cup of BBQ sauce in a small bowl.
  • Cover pizza dough with 3 or 4 tablespoons BBQ sauce, then add chicken, peppers, onions, and cheese.
  • Return pizza to oven, cook for 10-12 minutes longer, or until cheese is melted and dough is golden brown.

Notes

Prep ahead by dicing the peppers and onions and placing them in a bag in the refrigerator. Cook chicken ahead of time in the slow cooker.Β 
A good side dish is a quick salad, which can also be prepared ahead of time!Β

      The reno is coming along slowly but surely. I’ll have an up date Friday and another one next week. We’ve been busy! ? I do love the windows!!! They have taken a few days due to priming and painting and drying times since there’s only a few hours to work on them. But I’m loving all the light!! ?
