Skinny Chicken Tortilla Casserole has been one of my go-to meals here lately. It’s perfect for any season, cold or warm. It’s the perfect comfort food for winter or as a low carb meal in the summer.

This recipe is super quick and easy to make and there’s not a lot of clean-up afterward. It only requires a few ingredients, a big bowl, and a baking dish. Use a baking dish that can be placed in the refrigerator with leftovers and to save on dishes!

Skinny Chicken Tortilla Casserole

I promise that after you make Skinny Chicken Tortilla Casserole once you will add it to your rotating weekly menu. It’s delicious!

What you need:

  • 1 can (10 1/2 oz) 98% fat-free condensed cream of chicken soup
  • 1 can (4.5 oz) chopped green chiles
  • 1 container (8 oz) fat-free sour cream
  • 1/2 cup milk (fat-free)
  • 2 1/2 cups cooked and shredded chicken breast
  • 8 corn tortillas, torn into bite-size pieces
  • 1 medium green bell pepper, chopped (about 1 cup)
  • 1 large tomato, chopped (about 1 cup)
  • 1 1/2 cups shredded Mexican cheese blend (6 oz)

Basically, you throw all the ingredients in a huge bowl, mix them up, and place them in a 13×9″ baking dish then bake for about 40 minutes or so.

How to make skinny chicken casserole

After the casserole has baked, toss some more cheese on top and bake a few minutes longer until the cheese is bubbly.

  • 1 can (10 1/2 oz) 98% fat-free condensed cream of chicken soup
  • 1 can (4.5 oz) chopped green chiles
  • 1 container (8 oz) fat-free sour cream
  • 1/2 cup milk (fat-free)
  • 2 1/2 cups cooked and shredded chicken breast
  • 8 corn tortillas, torn into bite-size pieces
  • 1 medium green bell pepper, chopped (about 1 cup)
  • 1 large tomato, chopped (about 1 cup)
  • 1 1/2 cups shredded Mexican cheese blend (6 oz)


  • Heat oven to 350°F. Spray 13×9-inch glass baking dish with cooking spray.
  • In a large bowl, mix soup, chiles, sour cream, and milk until blended.
  • Stir in chicken, tortillas, and bell pepper.
  • Stir in tomato and 1 cup of cheese. Spoon mixture into baking dish.
  • Cover dish with foil and bake 40 minutes.
  • Uncover; sprinkle with remaining cheese and bake uncovered 5-10 minutes longer or until cheese is melted and casserole is bubbly.

  1. Hi Michele, that looks yummy. I make a similar casserole with fajita chicken & serve it with yellow spanish rice & pink beans. (Goya pink beans are a fav go to for this vegetarian- super simple recipe on can.) Also guacamole salad is a nice addition if you like avocados. ?????

  2. I think a side salad full of the healthier greens, almond slices, shredded carrots and some cut up red peppers would go great with this one. Looks like a quick casserole. I’ll have to try it – once my oven is fixed. Six months and counting without it. *sniff*

  3. Oh yum, yum, yum! I would love a plate of this! I’d probably serve this along some rice. Maybe put the rice down first in a little mound and then scoop the casserole over top? Could be delish!

  7. Ah I love black beans! I actually only discovered their existence a few months ago.
    I’ve no clue what side would go well with that dish (which looks really tasty, by the way). I’d probably just eat it with garlic sauce, cause I like to add garlic sauce to almost every dish 😀

Hi Michelle, I would do just a plain vegetable like string beans just steamed, broccoli, any green vegetable just either steamed or sauted very plainly because the casserole has already so much flavor.
