Philly Cheesesteak Stuffed Peppers
These delicious Philly Cheesesteak Stuffed Peppers make a quick and easy weeknight meal. Super cheesy and super delicious!

The way I see it is that as long as I eat healthy before the holidays then I can eat all the pies and cakes during the holidays.
Then it doesn’t count, right?
Okay, so maybe that’s not how it works, but a girl can dream!

Philly Cheesesteak Stuffed Peppers
Philly Cheesesteak Stuffed Peppers are absolutely delicious! They are super cheesy, which is always a plus with any cheesesteak meal. These peppers cook up quickly and are so easy to make. They are low carb and low sodium, yet still pack plenty of flavor. You can add any seasoning or spices you’d like.
Let’s get started!
The first thing you’ll do is preheat your oven to 400*F. Slice your peppers in half lengthwise and remove the seeds and ribs.
Saute some diced onions over medium heat with butter, olive oil, and minced garlic.
Slice the roast beef into thin strips and add it to the onions, cook about 10 minutes. I purchased the roast beef from the deli section at my local grocery store.
Line each pepper with a slice of provolone cheese.
The dish I used to cook my Philly Cheesesteak Stuffed Peppers in came from Pampered Chef years ago. I’m not sure if they still have these, but it’s my favorite dish for cooking small portions!
Fill each pepper with the meat/onion mixture.
Top each pepper with another slice of provolone cheese.
Bake for 15-20 minutes until the cheese is melted and golden brown.
I served the Philly Cheesesteak Stuffed Peppers with black beans topped with diced onion.

Philly Cheesesteak Stuffed Peppers
Ingredients
- 8 oz thinly sliced roast beef
- 8 slices provolone cheese
- 2 large green bell peppers
- 1 medium onion
- 2 tbsp butter
- 2 tbsp olive oil
- 1 tbsp garlic, minced
Instructions
- Preheat oven to 400*F.
- Heat the butter and oil in a frying pan over medium heat. Dice onions and mince garlic; add to the frying pan. Saute until onions and garlic are caramelized.
- Slice roast beef into thin strips and add to the onions and garlic. Cook 5-10 minutes.
- Slice peppers in half lengthwise, remove seeds and ribs. Line each pepper with a slice of provolone cheese.
- Fill each pepper with meat mixture until almost overflowing, then cover with another slice of provolone cheese.
- Bake for 15-20 minutes until cheese is melted and golden brown.

I’ve had stuffed peppers before, but have never had philly cheesesteak. This sounds like a great combination of flavors. I will have to give this a try next time I get my hands on some peppers.
We make these but I put them on a big roasting pan for the whole family. My sister-in-law first told me about the recipe. But, of course, now she’s gone vegan so I only get vegan recipes from her. 😛
That’s a good idea! A guy that works with my husband is vegan and he’s always telling my husband about dinners they have. I’m thinking, that’s fine and all, but I need chicken! haha

Oh these look so delish Michelle! Love how you made it low-carb. Carbs are the killer for me. I could eat french fries between two pieces of bread with ketchup, that’s how much I love carbs! (I’v actually never done this before – don’t worry.)
