Quick Chicken Fajitas

Perfect recipe for those crazy nights when you don't have time to cook a large meal. Plus it's kid approved!

Ingredients
  

  • 3 medium Bell Peppers - green, yellow, red
  • 1 medium onion
  • 2 cloves garlic
  • 1 lb. boneless, skinless chicken breasts
  • 2 Tbsp. taco seasoning
  • 1 lime
  • 12 flour tortillas
  • 4 oz mild cheddar cheese (or sharp)

Optional toppings: sour cream, salsa, guacamole

    Instructions
     

    • Slice bell peppers and onion into strips, put in the pan. 

    • Using a garlic press, press the garlic on top of the vegetables.
    • Juice the lime into a medium bowl and add the taco seasoning; mix well. Add the chicken to the mixture and turn to coat. Place the seasoned chicken over the vegetables in the pan.
    • Microwave, covered, on high for 12-15 minutes or until chicken reaches 165 degrees and the juices run clear.
    • Transfer the chicken to a cutting mat and slice it into thin strips. Return the chicken to the pan and combine it with the vegetables.
    • Wrap the tortillas with a damp paper towel and microwave them on high for 30 seconds, or until warm. To serve, spoon the chicken and vegetable mixture onto the centers of the tortillas. Top with cheese and any additional toppings.
